Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tsp Fun Earth Morning Routine (or favorite mushroom powder)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 tablespoons melted unsalted grass fed butter or organic vegetable oil
- 1 large cage free egg
- 1/4 tsp vanilla extract
- 1 tablespoon vegetable oil (for cooking)
Cooking Instructions:

- Preheat Griddle or Pan:
- Heat a griddle or large non-stick pan over medium-high heat. Add 1 tablespoon of coconut or vegetable oil and spread it around to coat the cooking surface.
- Mix Dry Ingredients:
- In a mixing bowl, whisk together the flour, Fun Earth mushroom powder, sugar, baking powder, and salt.
- Combine Wet Ingredients:
- In another bowl, mix the milk, melted butter or vegetable oil, vanilla extract and the egg.
- Mix Wet and Dry Ingredients:
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. It’s okay if there are a few lumps; overmixing can make the pancakes tough.
- Cook Pancakes:
- Using a 1/4 cup measuring cup, scoop the batter and pour it onto the hot griddle or pan. You can make the pancakes as large or small as you like.
- Cook Until Bubbles Form:
- Cook until you see bubbles forming on the surface of the pancakes, about 2-3 minutes.
- Flip and Cook:
- Carefully flip the pancakes with a spatula and cook for an additional 2-3 minutes or until they’re golden brown on both sides and cooked through.
Serve Warm:

- Transfer the pancakes to a plate, and serve them while they’re warm.
- Optional Toppings:
- Add your favorite pancake toppings such as maple syrup, fresh berries, chocolate chips, or whipped cream.

Instructions For the Blueberry Topping:
- In a small saucepan, combine the blueberries, water, granulated sugar, lemon juice, and lemon zest.
- Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 10-12 minutes or until the blueberries have softened and the sauce has thickened.
- Remove the saucepan from heat and set the blueberry topping aside.
To Serve:
- Stack the pancakes on a plate.
- Drizzle the warm blueberry topping generously over the pancakes.
- Optionally, top with a dollop of whipped cream and a drizzle of maple syrup.
