Blueberry Pancakes

About This Project

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tsp Fun Earth Morning Routine (or favorite mushroom powder)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons melted unsalted grass fed butter or organic vegetable oil
  • 1 large cage free egg
  • 1/4 tsp vanilla extract
  • 1 tablespoon vegetable oil (for cooking)

Cooking Instructions:

    • Preheat Griddle or Pan:
      • Heat a griddle or large non-stick pan over medium-high heat. Add 1 tablespoon of coconut or vegetable oil and spread it around to coat the cooking surface.
    • Mix Dry Ingredients:
      • In a mixing bowl, whisk together the flour, Fun Earth mushroom powder, sugar, baking powder, and salt.
    • Combine Wet Ingredients:
      • In another bowl, mix the milk, melted butter or vegetable oil, vanilla extract and the egg.
    • Mix Wet and Dry Ingredients:
      • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. It’s okay if there are a few lumps; overmixing can make the pancakes tough.
    • Cook Pancakes:
      • Using a 1/4 cup measuring cup, scoop the batter and pour it onto the hot griddle or pan. You can make the pancakes as large or small as you like.
    • Cook Until Bubbles Form:
      • Cook until you see bubbles forming on the surface of the pancakes, about 2-3 minutes.
    • Flip and Cook:
      • Carefully flip the pancakes with a spatula and cook for an additional 2-3 minutes or until they’re golden brown on both sides and cooked through.

Serve Warm:

    • Transfer the pancakes to a plate, and serve them while they’re warm.
  • Optional Toppings:
    • Add your favorite pancake toppings such as maple syrup, fresh berries, chocolate chips, or whipped cream.

Instructions For the Blueberry Topping:

  • In a small saucepan, combine the blueberries, water, granulated sugar, lemon juice, and lemon zest.
  • Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 10-12 minutes or until the blueberries have softened and the sauce has thickened.
  • Remove the saucepan from heat and set the blueberry topping aside.

To Serve:

  • Stack the pancakes on a plate.
  • Drizzle the warm blueberry topping generously over the pancakes.
  • Optionally, top with a dollop of whipped cream and a drizzle of maple syrup.
